  • 1 cup sugar
  • 3 eggs
  • 1/2 cup buttermilk
  • 1 tsp baking soda
  • 1 1/2 cups flour
  • 1/2 cup shortening
  • 1 cup blackberry jam
  • 1/2 tsp salt
  • 1/2 tsp grated nutmeg
  • 2 tbsp shortening (for sauce)
  • 1 cup whipped cream (for sauce)
  • Powdered sugar (for sauce)
  • 1/4 tsp salt (for sauce)
  • Vanilla extract or sherry (for sauce)

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Cream 1/2 cup shortening and sugar together.
  3. 3 Add beaten eggs, salt, nutmeg, flour, and soda mixed with buttermilk.
  4. 4 Mix in blackberry jam until well combined.
  5. 5 Pour batter into a greased pudding dish.
  6. 6 Bake for 30 minutes or until firm.
