Blackberry Jam Pudding With Whipped Cream Sauce
Ingredients
- 1 cup sugar
- 3 eggs
- 1/2 cup buttermilk
- 1 tsp baking soda
- 1 1/2 cups flour
- 1/2 cup shortening
- 1 cup blackberry jam
- 1/2 tsp salt
- 1/2 tsp grated nutmeg
- 2 tbsp shortening (for sauce)
- 1 cup whipped cream (for sauce)
- Powdered sugar (for sauce)
- 1/4 tsp salt (for sauce)
- Vanilla extract or sherry (for sauce)
Method
- 1 Preheat oven to 350°F.
- 2 Cream 1/2 cup shortening and sugar together.
- 3 Add beaten eggs, salt, nutmeg, flour, and soda mixed with buttermilk.
- 4 Mix in blackberry jam until well combined.
- 5 Pour batter into a greased pudding dish.
- 6 Bake for 30 minutes or until firm.
- 7 For sauce, cream 2 tbsp shortening with powdered sugar and salt.
- 8 Stir sauce over boiling water until liquid.
- 9 Flavor with vanilla or sherry, then stir in whipped cream.
- 10 Serve sauce hot with the pudding.
