Blackberry Cream Parfait
Ingredients
- 1 quart blackberries
- Sugar to taste
- 1/2 pint heavy cream
- 2 egg whites
Method
- 1 Mash the blackberries gently and place them in a fine-mesh sieve or cheesecloth to drain the juice.
- 2 Sprinkle sugar over the fruit to help release the juice, then collect the liquid.
- 3 Whip the cream until soft peaks form and gently fold it into the blackberry juice.
