Blackberry Cream Parfait

Ingredients

  • 1 quart blackberries
  • Sugar to taste
  • 1/2 pint heavy cream
  • 2 egg whites

Method

  1. 1 Mash the blackberries gently and place them in a fine-mesh sieve or cheesecloth to drain the juice.
  2. 2 Sprinkle sugar over the fruit to help release the juice, then collect the liquid.
  3. 3 Whip the cream until soft peaks form and gently fold it into the blackberry juice.
