Black Eyed Pea And Collard Greens Soup

Ingredients

  • 1 tablespoon vegetable oil
  • 1 medium onion, chopped
  • 1/8 teaspoon garlic powder
  • 4 ounces deli ham, sliced
  • 1/2 pound collard greens, stems removed and chopped
  • 1 can (14.5 ounce) fat-free, low sodium chicken or vegetable broth
  • 4 cups black-eyed peas, canned (drained and rinsed)
  • salt and pepper to taste
  • 2 teaspoons apple cider vinegar

Method

  1. 1 Wash the collard greens. Drain and rinse the black-eyed peas.
  2. 2 Place oil, onion, garlic powder, and ham in a large pot over medium heat. Stir occasionally until onion is clear, about 3 to 5 minutes.
  3. 3 Add collard greens and broth to the pot. Cover and simmer for about 20 minutes until the collard greens are tender.
  4. 4 Mash half of the black-eyed peas in a small bowl. Stir the mashed and whole peas into the soup and simmer for another 5 minutes.
  5. 5 Season with salt and pepper to taste. Stir in apple cider vinegar just before serving.
