Black Eyed Pea And Collard Greens Soup
Ingredients
- 1 tablespoon vegetable oil
- 1 medium onion, chopped
- 1/8 teaspoon garlic powder
- 4 ounces deli ham, sliced
- 1/2 pound collard greens, stems removed and chopped
- 1 can (14.5 ounce) fat-free, low sodium chicken or vegetable broth
- 4 cups black-eyed peas, canned (drained and rinsed)
- salt and pepper to taste
- 2 teaspoons apple cider vinegar
Method
- 1 Wash the collard greens. Drain and rinse the black-eyed peas.
- 2 Place oil, onion, garlic powder, and ham in a large pot over medium heat. Stir occasionally until onion is clear, about 3 to 5 minutes.
- 3 Add collard greens and broth to the pot. Cover and simmer for about 20 minutes until the collard greens are tender.
- 4 Mash half of the black-eyed peas in a small bowl. Stir the mashed and whole peas into the soup and simmer for another 5 minutes.
- 5 Season with salt and pepper to taste. Stir in apple cider vinegar just before serving.
