Black Bean Sweet Potato Quesadillas

Ingredients

  • 1 medium sweet potato, cooked and cut into pieces
  • 1 can black beans, drained and rinsed
  • 1 small onion, chopped
  • 1 clove garlic, minced
  • 1 1/2 teaspoons ground cumin
  • 1 1/2 teaspoons paprika
  • 2 tablespoons chopped chili pepper
  • 4 whole wheat tortillas
  • 1/2 cup reduced-fat cheddar cheese, shredded
  • 1 cup baby spinach
  • Non-stick cooking spray
  • Sour cream or plain yogurt, for serving

Method

  1. 1 Spray a medium skillet with cooking spray. Sauté onion and garlic until soft.
  2. 2 Add sweet potatoes, black beans, cumin, paprika, and chili pepper. Heat until warm.
  3. 3 Spread the mixture over half of each tortilla. Top with spinach and cheese.
  4. 4 Fold tortillas over. Cook in a sprayed skillet over high heat for 1 minute per side until browned and cheese melts.
