Black Bean Sweet Potato Quesadillas
Ingredients
- 1 medium sweet potato, cooked and cut into pieces
- 1 can black beans, drained and rinsed
- 1 small onion, chopped
- 1 clove garlic, minced
- 1 1/2 teaspoons ground cumin
- 1 1/2 teaspoons paprika
- 2 tablespoons chopped chili pepper
- 4 whole wheat tortillas
- 1/2 cup reduced-fat cheddar cheese, shredded
- 1 cup baby spinach
- Non-stick cooking spray
- Sour cream or plain yogurt, for serving
Method
- 1 Spray a medium skillet with cooking spray. Sauté onion and garlic until soft.
- 2 Add sweet potatoes, black beans, cumin, paprika, and chili pepper. Heat until warm.
- 3 Spread the mixture over half of each tortilla. Top with spinach and cheese.
- 4 Fold tortillas over. Cook in a sprayed skillet over high heat for 1 minute per side until browned and cheese melts.
