Black Bean Salsa With Bell Peppers
Ingredients
- 1 (15 ounce) can black beans, drained and rinsed
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 onion, diced
- 2 (15 ounce) cans diced tomatoes, drained
- 2 cloves garlic, minced
- 1 teaspoon ground cumin
- 3 tablespoons dried cilantro
- 3 tablespoons rice vinegar
Method
- 1 Drain and rinse the black beans thoroughly.
- 2 In a large mixing bowl, combine the beans and drained diced tomatoes.
- 3 Dice the green and red bell peppers, onion, and garlic, then add them to the bowl.
- 4 Whisk together the cumin, dried cilantro, and rice vinegar in a small bowl.
- 5 Pour the dressing over the vegetable mixture and stir well to combine.
