Black Bean Rice Burgers

Ingredients

  • 1 (15.5 ounce) can low-sodium black beans, drained and rinsed
  • 1 large egg
  • 1/2 cup cooked brown rice
  • 1/4 cup minced scallions
  • 2 tablespoons chopped fresh cilantro
  • 1 clove garlic, minced
  • 1/4 teaspoon dried oregano
  • 1 teaspoon vegetable oil
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 4 whole-wheat buns

Method

  1. 1 Mash beans in a bowl until chunky. Stir in egg, rice, scallions, garlic, oregano, salt, and pepper until combined.
  2. 2 Divide mixture into 4 portions and form into patties 3/4 to 1 inch thick.
  3. 3 Heat oil in a large skillet over high heat. Cook patties 4 to 5 minutes per side until browned and heated through.
  4. 4 Serve burgers on whole-wheat buns.
