Black Bean Rice Burgers
Ingredients
- 1 (15.5 ounce) can low-sodium black beans, drained and rinsed
- 1 large egg
- 1/2 cup cooked brown rice
- 1/4 cup minced scallions
- 2 tablespoons chopped fresh cilantro
- 1 clove garlic, minced
- 1/4 teaspoon dried oregano
- 1 teaspoon vegetable oil
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 4 whole-wheat buns
Method
- 1 Mash beans in a bowl until chunky. Stir in egg, rice, scallions, garlic, oregano, salt, and pepper until combined.
- 2 Divide mixture into 4 portions and form into patties 3/4 to 1 inch thick.
- 3 Heat oil in a large skillet over high heat. Cook patties 4 to 5 minutes per side until browned and heated through.
- 4 Serve burgers on whole-wheat buns.
