  • 1 1/3 cups black beans (cooked, mashed with 1 teaspoon canola oil, or use canned vegetarian refried beans)
  • 4 corn tortillas
  • 2 tablespoons red onion (chopped)
  • 1/2 cup tomatoes (chopped)
  • 1/2 cup low-sodium salsa
  • 4 tablespoons plain non-fat yogurt
  • 2 tablespoons cilantro (chopped)

Method

  1. 1 Mix black beans, chopped red onion, and chopped tomatoes in a bowl.
  2. 2 Microwave tortillas between damp paper towels on high for 15 seconds to soften.
  3. 3 Divide the bean mixture evenly among the four tortillas.
  4. 4 Fold each tortilla to enclose the filling securely.
