Black Bean And Rice Skillet
Ingredients
- 1 teaspoon olive oil
- 1 tablespoon minced garlic
- 1 cup chopped onion
- 1 cup diced green bell pepper
- 3 cups cooked black beans
- 2 cups low-sodium chicken broth
- 1/2 teaspoon vinegar
- Dried oregano and black pepper to taste
- 3 cups cooked brown rice
Method
- 1 Heat olive oil in a large nonstick skillet over medium heat.
- 2 Sauté garlic, onion, and green bell pepper until golden, about 3 minutes.
- 3 Stir in beans, broth, vinegar, oregano, and pepper. Bring to a boil.
- 4 Lower to a simmer, cover, and cook for 5 minutes.
- 5 Spoon the bean mixture over cooked brown rice and serve.
