Black Bean And Mango Wraps

Ingredients

  • 1 green or red bell pepper, seeded and chopped
  • 1 onion, peeled and sliced
  • 2 cans black beans, low-sodium (15 ounce each), drained and rinsed
  • 1 mango, chopped
  • 1/2 cup lime juice
  • 1 cup fresh cilantro, chopped
  • 4 avocados, peeled and diced
  • flour tortillas (10 inch)

Method

  1. 1 Wash hands. Sauté bell peppers and onion in a nonstick pan over medium heat for 5 minutes.
  2. 2 Add black beans and stir well. Reduce heat to low and simmer for 5 minutes.
  3. 3 In a small bowl, combine chopped mango, lime juice, cilantro, and diced avocado. Set aside half for topping.
  4. 4 Fill warmed tortillas with 1/4 of the bean mixture and 1/4 of the mango mixture. Fold ends and roll up.
  5. 5 Top the wraps with the remaining mango mixture and serve.
