Black Bean And Ham Bone Soup
Ingredients
- 1 pint black beans
- 2 quarts water
- 1 onion
- 2 carrots
- 1 small tsp allspice
- 5-6 cloves
- small piece bacon or ham
- 1 large bone from roast beef or mutton
Method
- 1 Combine beans, water, onion, carrots, allspice, cloves, bacon/ham, and beef/mutton bone in a pot.
- 2 Boil until ingredients are very tender, about 2 hours.
- 3 Strain through a colander, removing the bone.
- 4 Rub the solids through the colander with a wooden spoon to create a smooth soup.
- 5 Add stock or water if the soup is too thick, and serve with meatballs if desired.
