Black Bean And Ham Bone Soup

Ingredients

  • 1 pint black beans
  • 2 quarts water
  • 1 onion
  • 2 carrots
  • 1 small tsp allspice
  • 5-6 cloves
  • small piece bacon or ham
  • 1 large bone from roast beef or mutton

Method

  1. 1 Combine beans, water, onion, carrots, allspice, cloves, bacon/ham, and beef/mutton bone in a pot.
  2. 2 Boil until ingredients are very tender, about 2 hours.
  3. 3 Strain through a colander, removing the bone.
  4. 4 Rub the solids through the colander with a wooden spoon to create a smooth soup.
  5. 5 Add stock or water if the soup is too thick, and serve with meatballs if desired.
