Bitter Orange And Lemon Marmalade

Ingredients

  • 1 dozen bitter oranges
  • 3 sweet oranges
  • 3 lemons
  • 4 pints cold water
  • 1.5 pounds white sugar

Method

  1. 1 Slice bitter oranges and lemons very thin. Pare sweet oranges. Set aside pips in a bowl.
  2. 2 Add 4 pints cold water to fruit. Cover pips with water and let stand for 24 hours.
  3. 3 Place pips in a muslin bag. Boil fruit and pips until quite tender.
  4. 4 Add 1.5 pounds sugar for every pound of fruit. Boil for 20-30 minutes until mixture jellies.
