Bitter Orange And Lemon Marmalade
Ingredients
- 1 dozen bitter oranges
- 3 sweet oranges
- 3 lemons
- 4 pints cold water
- 1.5 pounds white sugar
Method
- 1 Slice bitter oranges and lemons very thin. Pare sweet oranges. Set aside pips in a bowl.
- 2 Add 4 pints cold water to fruit. Cover pips with water and let stand for 24 hours.
- 3 Place pips in a muslin bag. Boil fruit and pips until quite tender.
- 4 Add 1.5 pounds sugar for every pound of fruit. Boil for 20-30 minutes until mixture jellies.
