Bitter Almond Macarons
Ingredients
- 10.5 oz powdered sugar
- 3 oz sweet almonds
- 1 oz bitter almonds
- 2 large egg whites
Method
- 1 Skin the almonds and dry them thoroughly. Chop and grind them very fine, adding one egg white gradually to form a paste.
- 2 Knead half of the powdered sugar into the almond paste by hand.
- 3 Transfer the mixture to a large bowl. While mixing, add the second egg white, then the remaining sugar, and finally the last bit of egg white until the mixture is homogeneous and firm.
- 4 Shape the mixture into sticks and cut into 1/3-inch rounds, or roll into walnut-sized balls. Flatten each to 1/3-inch thickness.
- 5 Dust the macarons with powdered sugar and bake in a hot oven (425°F) until set.
