Bitter Almond and Rose Water Macaroons

Ingredients

  • 2 oz bitter almonds
  • 1 tsp orange-flower water
  • 1 tsp rose-water
  • 5 egg whites
  • fine sifted sugar

Method

  1. 1 Blanch bitter almonds in cold water, then beat them extremely fine with orange-flower water and rose-water.
  2. 2 Beat egg whites to a light froth, then gradually mix them into the almond paste, beating well until light.
  3. 3 Mix in fine sifted sugar to form a light paste. Spoon small cakes onto wafer paper on tin plates.
  4. 4 Bake in a brisk oven (400°F) until set and lightly golden.
