Bitter Almond and Rose Water Macaroons
Ingredients
- 2 oz bitter almonds
- 1 tsp orange-flower water
- 1 tsp rose-water
- 5 egg whites
- fine sifted sugar
Method
- 1 Blanch bitter almonds in cold water, then beat them extremely fine with orange-flower water and rose-water.
- 2 Beat egg whites to a light froth, then gradually mix them into the almond paste, beating well until light.
- 3 Mix in fine sifted sugar to form a light paste. Spoon small cakes onto wafer paper on tin plates.
- 4 Bake in a brisk oven (400°F) until set and lightly golden.
