Beet Pickled Eggs

Ingredients

  • 6 eggs
  • 1 bunch beets
  • 4 large onions, sliced thin
  • 4 tablespoons sugar
  • 1 teaspoon salt
  • ½ teaspoon paprika
  • 1 cup vinegar
  • ½ cup water

Method

  1. 1 Hard boil eggs until tender. Peel and set aside.
  2. 2 Cook beets until tender, cool in cold water, peel, and slice thickly.
  3. 3 Place sliced beets and onions in a dish.
  4. 4 Combine sugar, salt, paprika, vinegar, and water in a saucepan. Bring to a boil and cook for 10 minutes.
  5. 5 Pour the hot brine over the beets and onions. Add the hard-boiled eggs.
