Beet Pickled Eggs
Ingredients
- 6 eggs
- 1 bunch beets
- 4 large onions, sliced thin
- 4 tablespoons sugar
- 1 teaspoon salt
- ½ teaspoon paprika
- 1 cup vinegar
- ½ cup water
Method
- 1 Hard boil eggs until tender. Peel and set aside.
- 2 Cook beets until tender, cool in cold water, peel, and slice thickly.
- 3 Place sliced beets and onions in a dish.
- 4 Combine sugar, salt, paprika, vinegar, and water in a saucepan. Bring to a boil and cook for 10 minutes.
- 5 Pour the hot brine over the beets and onions. Add the hard-boiled eggs.
