Beet And Potato Salad With Anchovies
Ingredients
- diced cooked potatoes
- diced boiled beets (one-fourth quantity of potatoes)
- lettuce leaves
- French dressing or Mayonnaise
- anchovies
- small pickles
- aspic (optional)
Method
- 1 Dice cooked potatoes and boiled beets, using one-fourth the quantity of beets relative to potatoes.
- 2 Mix the diced potatoes and beets together in a bowl.
- 3 Serve the mixture on a bed of lettuce leaves.
- 4 Toss with French dressing or Mayonnaise.
- 5 Garnish with anchovies and small pickles, or mold in aspic.
