Beet And Bean Salad With Lemon Mustard Dressing
Ingredients
- 2 cups sliced cooked beets
- 2 cups cooked beans, rinsed
- 1 head lettuce, washed and torn
- 2 tablespoons vegetable oil
- 1/4 cup lemon juice or vinegar
- 1 garlic clove, finely chopped
- 2 teaspoons mustard
- Salt and pepper to taste
Method
- 1 In a large bowl, whisk together vegetable oil, lemon juice, chopped garlic, mustard, salt, and pepper to create the dressing.
- 2 Place the sliced cooked beets in a small bowl and toss with 1 tablespoon of the dressing to coat.
- 3 Add the rinsed beans and torn lettuce to the large bowl with the remaining dressing; toss to combine.
- 4 Plate the dressed greens and beans, then top with the dressed beets before serving.
