Beer Stewed Beef With Celery

Ingredients

  • 1 rump of beef, cut from bone
  • flour for dredging
  • boiling water
  • 1 pint small beer
  • 2 carrots
  • 1 onion, stuck with cloves
  • whole peppercorns
  • salt
  • lemon peel
  • sweet herbs
  • gravy
  • celery, boiled
  • ketchup

Method

  1. 1 Dredge beef in flour and fry until browned.
  2. 2 Add boiling water, small beer, carrots, onion, pepper, salt, lemon peel, and sweet herbs. Stew for one hour.
  3. 3 Remove meat and strain the sauce. Thicken sauce with a little flour.
  4. 4 Return meat to sauce with boiled celery and ketchup. Simmer briefly to serve.
