Beer Stewed Beef With Celery
Ingredients
- 1 rump of beef, cut from bone
- flour for dredging
- boiling water
- 1 pint small beer
- 2 carrots
- 1 onion, stuck with cloves
- whole peppercorns
- salt
- lemon peel
- sweet herbs
- gravy
- celery, boiled
- ketchup
Method
- 1 Dredge beef in flour and fry until browned.
- 2 Add boiling water, small beer, carrots, onion, pepper, salt, lemon peel, and sweet herbs. Stew for one hour.
- 3 Remove meat and strain the sauce. Thicken sauce with a little flour.
- 4 Return meat to sauce with boiled celery and ketchup. Simmer briefly to serve.
