Beef Stew With Steamed Dumplings
Ingredients
- 3-4 lbs beef neck, cut into pieces
- Cold water
- 3 carrots, sliced thin
- 3 onions, sliced thin
- Salt and pepper
- Minced parsley
- 2 cups flour
- 2 heaping tsp baking powder
- Pinch of salt
- 1 egg, well-beaten
- Milk
- Butter
Method
- 1 Place beef in a pot, cover with cold water, and add carrots, onions, salt, pepper, and parsley. Cover and cook until meat is nearly done.
- 2 Sift flour, baking powder, and a pinch of salt. Mix in beaten egg and enough milk to form a stiff batter.
- 3 Pour batter into buttered patty pans and steam over boiling water until dumplings are cooked through.
- 4 Remove meat and dumplings. Thicken the remaining gravy by stirring in flour browned in butter. Pour over and serve.
