Beef Spinach Skillet Lasagna

Ingredients

  • 1/2 pound lean ground beef
  • 1/2 cup chopped onion
  • 1 can (15 ounce) tomato sauce
  • 1 1/2 cups water
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon oregano
  • 1/4 teaspoon basil
  • 3 cups uncooked noodles, 1/2 inch wide
  • 1 package (10 ounce) frozen chopped spinach, defrosted
  • 1 cup non-fat cottage cheese
  • 1/2 cup shredded part-skim mozzarella cheese

Method

  1. 1 Brown ground beef in a large skillet. Drain and rinse to remove fat.
  2. 2 Add onion, tomato sauce, water, garlic powder, oregano, and basil. Cover and bring to a boil.
  3. 3 Add noodles. Cover and simmer for 5 minutes.
  4. 4 Stir in defrosted spinach. Cover and simmer for 5 minutes.
  5. 5 Spoon cottage cheese on top and sprinkle with mozzarella. Cover and simmer for 10 minutes. Add water if too dry.
