Beef Roast With Potatoes And Turnips

Ingredients

  • 1 pound beef round roast, thawed
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon vegetable oil
  • 8 red potatoes, peeled and quartered
  • 2 turnips, peeled and quartered
  • 1/2 cup onion, chopped in 1-inch pieces
  • 1/2 cup carrots, chopped in 1-inch pieces
  • 1/2 cup low-sodium tomato juice

Method

  1. 1 Preheat oven to 350°F. Season roast with salt and pepper.
  2. 2 In a large pan, brown roast in oil over medium-high heat for 10-12 minutes. Drain fat.
  3. 3 Place roast in center of a large iron skillet or roasting pan. Arrange potatoes, turnips, onions, and carrots around it.
  4. 4 Pour tomato juice over roast and vegetables. Cover with lid or foil and bake for 1 hour until potatoes are cooked.
  5. 5 Cut roast into 1-inch chunks if desired. Mix and serve.
