Beef Rib Hot Pot With Peppers And Raisins
Ingredients
- 2 pounds beef ribs
- 1 tablespoon drippings or butter
- 2 chopped onions
- 1 chopped clove garlic
- 6 seeded and shredded green peppers
- Salt and pepper to taste
- 1 pinch thyme
- 1 tablespoon vinegar
- 12 raisins
- 12 olives
- 1 can tomatoes
- Flour for thickening
- Butter for browning flour
- Buttered toast for serving
Method
- 1 Place beef ribs in a saucepan with drippings or butter. Add onions, garlic, green peppers, salt, pepper, thyme, vinegar, raisins, olives, and tomatoes.
- 2 Cover and cook until the meat falls from the bones.
- 3 Remove the bones. Thicken the sauce by stirring in flour browned in butter.
- 4 Serve the hot pot over buttered toast.
