Beef Rib en Papillote With Mushrooms
Ingredients
- 1 rib of beef
- broth
- salt
- pepper
- butter
- parsley, finely shredded
- scallions, finely shredded
- shallots, finely shredded
- mushrooms, finely shredded
- basil powder
Method
- 1 Cut the rib of beef neatly and stew it in broth with salt and pepper until tender.
- 2 Reduce the cooking liquid until it thickens and coats the meat.
- 3 Coat the beef in butter mixed with shredded parsley, scallions, shallots, mushrooms, and basil powder.
- 4 Wrap the beef and seasoning tightly in a sheet of white paper, folding the edges like a curling paper.
- 5 Grease the outside of the paper packet and place it on greased paper over a slow fire (300°F) until heated through.
- 6 Serve the beef immediately in the paper packet.
