Beef Pot Roast With Carrots And Gravy
Ingredients
- 1 beef roast
- 2 tablespoons onion, cut
- 1 tablespoon salt
- ¼ teaspoon pepper
- 2 cups boiling water
- potatoes, peeled and cut
- 1 tablespoon flour
- cold water
- chopped parsley
- carrots, cut in small pieces (optional)
Method
- 1 Wipe beef with a damp cloth and brown well on all sides in an iron kettle or frying pan.
- 2 Add onion, salt, pepper, and 2 cups boiling water. Reduce heat and boil slowly for 1¾ hours, adding water as necessary.
- 3 Add potatoes and boil for 30 minutes. Remove meat and potatoes to a platter.
- 4 Mix flour with a little cold water to make a slurry, stir into the gravy, and boil until thickened.
- 5 Pour gravy over the meat and potatoes, then sprinkle with chopped parsley before serving.
