Beef Pot Roast With Carrots And Gravy

Ingredients

  • 1 beef roast
  • 2 tablespoons onion, cut
  • 1 tablespoon salt
  • ¼ teaspoon pepper
  • 2 cups boiling water
  • potatoes, peeled and cut
  • 1 tablespoon flour
  • cold water
  • chopped parsley
  • carrots, cut in small pieces (optional)

Method

  1. 1 Wipe beef with a damp cloth and brown well on all sides in an iron kettle or frying pan.
  2. 2 Add onion, salt, pepper, and 2 cups boiling water. Reduce heat and boil slowly for 1¾ hours, adding water as necessary.
  3. 3 Add potatoes and boil for 30 minutes. Remove meat and potatoes to a platter.
  4. 4 Mix flour with a little cold water to make a slurry, stir into the gravy, and boil until thickened.
  5. 5 Pour gravy over the meat and potatoes, then sprinkle with chopped parsley before serving.
