Beef Bone Broth With Gumbo And Vegetables

Ingredients

  • trimmings of roast beef
  • beef-steak bones
  • 1/8 tsp pepper
  • 2 tsp salt
  • 3 potatoes, peeled and chopped
  • 1/2 carrot
  • 1/2 onion
  • 3 gumbo pods
  • 1/2 bay leaf
  • chopped parsley
  • caramel (for color)

Method

  1. 1 Boil beef trimmings and bones for three hours.
  2. 2 Cool the broth and skim off the fat.
  3. 3 Add pepper, salt, potatoes, carrot, onion, gumbo pods, bay leaf, and parsley.
  4. 4 Simmer until vegetables are tender, add caramel for color, and serve hot.
