Beef And Vegetable Stock

Ingredients

  • 4 pounds shin of beef or other meats and bones
  • 4 carrots
  • 4 onions
  • 1 turnip
  • 1 small head of celery
  • 1/2 tablespoon salt
  • 1/2 teaspoon peppercorns
  • 6 cloves
  • 5 pints cold water

Method

  1. 1 Cut up the meat and bones and place them in a large saucepan.
  2. 2 Pour 5 pints of cold water over the meat and bring to a boil, skimming as needed.
  3. 3 Prepare the vegetables (carrots, onions, turnip, celery) and add them to the saucepan.
  4. 4 Add the salt, peppercorns, and cloves with the vegetables.
  5. 5 Cover closely and boil slowly for 4 hours.
