Beef And Vegetable Stock
Ingredients
- 4 pounds shin of beef or other meats and bones
- 4 carrots
- 4 onions
- 1 turnip
- 1 small head of celery
- 1/2 tablespoon salt
- 1/2 teaspoon peppercorns
- 6 cloves
- 5 pints cold water
Method
- 1 Cut up the meat and bones and place them in a large saucepan.
- 2 Pour 5 pints of cold water over the meat and bring to a boil, skimming as needed.
- 3 Prepare the vegetables (carrots, onions, turnip, celery) and add them to the saucepan.
- 4 Add the salt, peppercorns, and cloves with the vegetables.
- 5 Cover closely and boil slowly for 4 hours.
