Beef And Salt Pork Soup

Ingredients

  • 4 ounces fat salt pork, diced
  • 1 onion, chopped
  • 1/2 medium carrot, sliced
  • 2 pounds lean beef, cut into small dice
  • 3 pints boiling water
  • Salt and pepper to taste

Method

  1. 1 Dice the salt pork and place it in a saucepan over heat. Stir until the pork begins to turn brown.
  2. 2 Add the chopped onion and sliced carrot. Fry until the vegetables are partly browned.
  3. 3 Add the diced lean beef and fry for five minutes.
  4. 4 Pour in 3 pints of boiling water. Season with salt and pepper.
  5. 5 Boil gently for three-quarters of an hour.
