Beef And Mushroom Macaroni Sauce
Ingredients
- ¼ lb salt pork or bacon, ground
- 1 small onion, ground
- 1 tbsp fresh parsley, chopped
- 1 clove garlic, shredded
- 2-3 dried mushrooms, softened in warm water
- ½ lb round steak, ground or cubed
- 1 cup fresh or canned tomatoes (or ½ tbsp tomato paste)
- 1 tbsp flour (optional, for thickening)
- Salted water for boiling pasta
- Grated cheese for serving
Method
- 1 Grind salt pork and fry in a saucepan. Grind the onion and add to the pan when pork begins to brown.
- 2 Add chopped parsley, shredded garlic, and softened mushrooms. Cook until vegetables are very brown, taking care not to burn the onion.
- 3 Add ground or cubed round steak. Cook until meat is well-browned.
- 4 Stir in tomatoes or tomato paste. Simmer slowly for about 45 minutes until the mixture reduces to a thick, creamy sauce. Add flour if needed to bind.
- 5 Boil macaroni or spaghetti in salted water until firm and tender. Drain carefully and place in a hot tureen.
- 6 Sprinkle grated cheese over the pasta, pour the sauce on top, and toss thoroughly with two forks before serving.
