Beef And Mushroom Macaroni Sauce

Ingredients

  • ¼ lb salt pork or bacon, ground
  • 1 small onion, ground
  • 1 tbsp fresh parsley, chopped
  • 1 clove garlic, shredded
  • 2-3 dried mushrooms, softened in warm water
  • ½ lb round steak, ground or cubed
  • 1 cup fresh or canned tomatoes (or ½ tbsp tomato paste)
  • 1 tbsp flour (optional, for thickening)
  • Salted water for boiling pasta
  • Grated cheese for serving

Method

  1. 1 Grind salt pork and fry in a saucepan. Grind the onion and add to the pan when pork begins to brown.
  2. 2 Add chopped parsley, shredded garlic, and softened mushrooms. Cook until vegetables are very brown, taking care not to burn the onion.
  3. 3 Add ground or cubed round steak. Cook until meat is well-browned.
  4. 4 Stir in tomatoes or tomato paste. Simmer slowly for about 45 minutes until the mixture reduces to a thick, creamy sauce. Add flour if needed to bind.
  5. 5 Boil macaroni or spaghetti in salted water until firm and tender. Drain carefully and place in a hot tureen.
  6. 6 Sprinkle grated cheese over the pasta, pour the sauce on top, and toss thoroughly with two forks before serving.
