Beef And Chicken Bone Broth
Ingredients
- 3 pounds chicken bones
- 3 pounds beef
- 3 quarts water
- 4 whole cloves
- 1 onion
- 1 carrot
- 2 pounds marrow bones
- 4 peppercorns
- 1 bouquet of herbs
- 1 bay leaf
- 3 stalks celery
- Juice of 1 lemon
- 2 tablespoons butter or marrow
- 1/2 cup sherry
- 1 turnip
Method
- 1 Brown vegetables in butter or suet and brown a few pieces of meat for color.
- 2 Combine meat, bones, water, cloves, onion, carrot, herbs, bay leaf, peppercorns, and celery in a soup digester or large pot.
- 3 Bring to a boil, skim, cover, and simmer for 5 hours.
- 4 Add turnip and remaining vegetables in the last 30 minutes.
- 5 Strain into an earthen vessel, cool, and remove fat.
- 6 Reheat with lemon juice, butter or marrow, and sherry; serve hot.
