Beef And Chicken Bone Broth

Ingredients

  • 3 pounds chicken bones
  • 3 pounds beef
  • 3 quarts water
  • 4 whole cloves
  • 1 onion
  • 1 carrot
  • 2 pounds marrow bones
  • 4 peppercorns
  • 1 bouquet of herbs
  • 1 bay leaf
  • 3 stalks celery
  • Juice of 1 lemon
  • 2 tablespoons butter or marrow
  • 1/2 cup sherry
  • 1 turnip

Method

  1. 1 Brown vegetables in butter or suet and brown a few pieces of meat for color.
  2. 2 Combine meat, bones, water, cloves, onion, carrot, herbs, bay leaf, peppercorns, and celery in a soup digester or large pot.
  3. 3 Bring to a boil, skim, cover, and simmer for 5 hours.
  4. 4 Add turnip and remaining vegetables in the last 30 minutes.
  5. 5 Strain into an earthen vessel, cool, and remove fat.
  6. 6 Reheat with lemon juice, butter or marrow, and sherry; serve hot.
