Beef And Apricot Stew With Leeks

Ingredients

  • 3 lbs beef steak
  • 1 pint beef broth or cooking liquid
  • 1 tsp white sugar
  • 1 handful dried apricots
  • Leeks, blanched
  • Salt and pepper to taste
  • Rind of ½ lemon

Method

  1. 1 Stew the beef steak in its own gravy or broth until tender.
  2. 2 Wash the dried apricots thoroughly, then add them to the stew along with the sugar.
  3. 3 Add blanched leeks, salt, pepper, and the lemon rind to the pot.
  4. 4 Simmer until flavors meld, then remove the lemon rind before serving.
