Beef And Apricot Stew With Leeks
Ingredients
- 3 lbs beef steak
- 1 pint beef broth or cooking liquid
- 1 tsp white sugar
- 1 handful dried apricots
- Leeks, blanched
- Salt and pepper to taste
- Rind of ½ lemon
Method
- 1 Stew the beef steak in its own gravy or broth until tender.
- 2 Wash the dried apricots thoroughly, then add them to the stew along with the sugar.
- 3 Add blanched leeks, salt, pepper, and the lemon rind to the pot.
- 4 Simmer until flavors meld, then remove the lemon rind before serving.
