Bean And Vegetable Tortilla Pizzas

Ingredients

  • 2 small corn tortillas (or flour tortillas)
  • 1 teaspoon vegetable oil or margarine
  • 1/3 cup refried beans, fat-free, low-sodium
  • 1 tablespoon onion, chopped
  • 1 teaspoon fresh or canned green chili peppers, diced
  • 1 tablespoon red taco sauce
  • 1/2 cup chopped vegetables (broccoli, mushrooms, spinach, red bell pepper)
  • 1 tablespoon shredded part-skim mozzarella cheese
  • 1/2 cup chopped fresh cilantro (optional)

Method

  1. 1 Brush one side of each of two tortillas with water. Press the wet sides together to form a thick crust.
  2. 2 Brush the outside of the tortillas with oil or margarine. Brown both sides in a heated frying pan. Repeat with remaining tortillas and set aside.
  3. 3 Heat refried beans, onion, and half of the chili peppers in a saucepan. Remove from heat.
  4. 4 Spread 1/3 cup bean mixture on each tortilla. Top with taco sauce, chopped vegetables, remaining chili peppers, and cheese.
  5. 5 Return to frying pan and heat until cheese melts. Top with cilantro if desired and serve immediately.
