Battered Fried Chicken Joints
Ingredients
- 1 cup flour
- 1 teaspoon salt
- 2 grains white pepper
- 1/2 cup water
- 2 eggs, well beaten
- 1 tablespoon melted Crisco
- Chicken joints, drained
- Crisco for frying
- Parsley for garnish
Method
- 1 Mix flour, salt, pepper, water, beaten eggs, and melted Crisco to form a smooth batter.
- 2 Heat Crisco in a kettle until a crumb of bread turns golden brown in 60 seconds.
- 3 Drain chicken joints without drying them. Dip each joint separately into the batter.
- 4 Fry the battered chicken joints in the hot Crisco until golden brown, about 10-12 minutes.
- 5 Serve on a folded napkin garnished with parsley.
