Battered Fried Chicken Joints

Ingredients

  • 1 cup flour
  • 1 teaspoon salt
  • 2 grains white pepper
  • 1/2 cup water
  • 2 eggs, well beaten
  • 1 tablespoon melted Crisco
  • Chicken joints, drained
  • Crisco for frying
  • Parsley for garnish

Method

  1. 1 Mix flour, salt, pepper, water, beaten eggs, and melted Crisco to form a smooth batter.
  2. 2 Heat Crisco in a kettle until a crumb of bread turns golden brown in 60 seconds.
  3. 3 Drain chicken joints without drying them. Dip each joint separately into the batter.
  4. 4 Fry the battered chicken joints in the hot Crisco until golden brown, about 10-12 minutes.
  5. 5 Serve on a folded napkin garnished with parsley.
