Basic Yeast Bread Loaves

Ingredients

  • 40 lbs flour
  • 1 handful salt
  • 1 quart yeast
  • 3 quarts water

Method

  1. 1 Stir flour, salt, yeast, and water together in a large bowl or trough.
  2. 2 Strew a little flour over the top, cover, and let stand for one hour.
  3. 3 Knead the dough thoroughly.
  4. 4 Shape into loaves and let rise for a quarter of an hour.
  5. 5 Bake in a moderate oven (350°F) until done.
