Barley Water

Ingredients

  • 2 tablespoons pearl barley
  • 1 quart cold water
  • Cream, milk, salt, lemon juice, or sugar (optional)

Method

  1. 1 Wash the pearl barley and place it in a pot with the cold water.
  2. 2 Let the mixture soak for several hours or overnight.
  3. 3 Boil gently over direct heat for two hours, or use a double boiler for four hours.
  4. 4 Simmer until the liquid reduces to one pint (for infants) or one cup (for adults).
  5. 5 Strain the liquid through muslin.
  6. 6 Add cream, milk, salt, lemon juice, or sugar to taste if desired.
