Barley Water
Ingredients
- 2 tablespoons pearl barley
- 1 quart cold water
- Cream, milk, salt, lemon juice, or sugar (optional)
Method
- 1 Wash the pearl barley and place it in a pot with the cold water.
- 2 Let the mixture soak for several hours or overnight.
- 3 Boil gently over direct heat for two hours, or use a double boiler for four hours.
- 4 Simmer until the liquid reduces to one pint (for infants) or one cup (for adults).
- 5 Strain the liquid through muslin.
- 6 Add cream, milk, salt, lemon juice, or sugar to taste if desired.
