Method

  1. 1 Boil barberries with claret wine, rose water, and sugar until very thick. Strain the mixture.
  2. 2 Line a dish with puff pastry or short pastry made from flour, cold butter, cold water, and sugar.
  3. 3 Spread the thickened barberry mixture onto the pastry base.
  4. 4 Cover with a pastry lid, bake until golden, then ice the top.
  5. 5 Before applying the iced cover, stick raw barberries into the pulp. Sprinkle with biscuit crumbs.
