Barberry And Rose Water Tart
Ingredients
- Barberries
- Claret wine
- Rose water
- Sugar
- Puff pastry
- Short pastry (flour, cold butter, cold water, sugar)
- Biscuit crumbs
- Raw barberries (for garnish)
Method
- 1 Boil barberries with claret wine, rose water, and sugar until very thick. Strain the mixture.
- 2 Line a dish with puff pastry or short pastry made from flour, cold butter, cold water, and sugar.
- 3 Spread the thickened barberry mixture onto the pastry base.
- 4 Cover with a pastry lid, bake until golden, then ice the top.
- 5 Before applying the iced cover, stick raw barberries into the pulp. Sprinkle with biscuit crumbs.
