Banana Wild Rice Muffins
Ingredients
- cooking spray
- 1 1/2 cups bakery mix
- 2 teaspoons sugar
- 2 teaspoons cinnamon
- 3/4 cup mashed bananas
- 1/4 cup milk
- 1 cup applesauce
- 1 cup cooked wild rice
- 1/2 cup chopped walnuts (optional)
Method
- 1 Preheat oven to 400°F. Spray a 12-cup muffin pan with cooking spray.
- 2 In a medium bowl, whisk together bakery mix, sugar, and cinnamon.
- 3 In a separate bowl, mix mashed bananas, milk, and applesauce.
- 4 Add wet ingredients to dry ingredients and stir until just combined.
- 5 Fold in cooked wild rice and chopped walnuts.
- 6 Spoon batter into muffin cups. Bake for 20-25 minutes.
