Banana Oat Bran Muffins
Ingredients
- 2 1/4 cups oat bran
- 1/4 cup brown sugar, firmly packed
- 1 1/2 teaspoons cinnamon
- 1 tablespoon baking powder
- 1 banana, mashed
- 3/4 cup unsweetened applesauce
- 2 tablespoons raisins, dates, or other dried fruit
- 1 large egg
- 1/2 cup orange juice
- 3/4 cup non-fat milk
- 2 tablespoons canola oil
Method
- 1 Preheat oven to 425°F. Mix oat bran, brown sugar, cinnamon, and baking powder in a bowl. Set aside.
- 2 In a separate bowl, whisk together the egg, orange juice, milk, and oil. Stir in mashed banana and dried fruit.
- 3 Pour liquid mixture into dry ingredients. Stir gently until just moistened; do not overmix.
- 4 Spray muffin tin with non-stick coating. Divide batter evenly among cups.
- 5 Bake for 15-17 minutes. Remove from pan after 10 minutes and cool on a wire rack.
