Banana Oat Bran Muffins

Ingredients

  • 2 1/4 cups oat bran
  • 1/4 cup brown sugar, firmly packed
  • 1 1/2 teaspoons cinnamon
  • 1 tablespoon baking powder
  • 1 banana, mashed
  • 3/4 cup unsweetened applesauce
  • 2 tablespoons raisins, dates, or other dried fruit
  • 1 large egg
  • 1/2 cup orange juice
  • 3/4 cup non-fat milk
  • 2 tablespoons canola oil

Method

  1. 1 Preheat oven to 425°F. Mix oat bran, brown sugar, cinnamon, and baking powder in a bowl. Set aside.
  2. 2 In a separate bowl, whisk together the egg, orange juice, milk, and oil. Stir in mashed banana and dried fruit.
  3. 3 Pour liquid mixture into dry ingredients. Stir gently until just moistened; do not overmix.
  4. 4 Spray muffin tin with non-stick coating. Divide batter evenly among cups.
  5. 5 Bake for 15-17 minutes. Remove from pan after 10 minutes and cool on a wire rack.
