Banana Custard Pie
Ingredients
- 2 tablespoons cornstarch
- cold water (for wetting cornstarch)
- 1 cup white sugar
- 1/3 cup butter
- boiling water
- 3 egg yolks, well beaten
- ripe bananas, sliced thin
- whipped cream (optional)
- 3 egg whites, well beaten
- sugar (for egg whites)
Method
- 1 Wet cornstarch with cold water. In a dish, stir together cornstarch, sugar, and butter.
- 2 Pour on boiling water to make a thick custard. Stir in well-beaten egg yolks and bring to a boil.
- 3 Slice ripe bananas thin and pour the hot custard over them.
- 4 Top with whipped cream, or alternatively, top with egg whites beaten well with sugar.
- 5 Chill and serve cold.
