Banana Custard Pie

Ingredients

  • 2 tablespoons cornstarch
  • cold water (for wetting cornstarch)
  • 1 cup white sugar
  • 1/3 cup butter
  • boiling water
  • 3 egg yolks, well beaten
  • ripe bananas, sliced thin
  • whipped cream (optional)
  • 3 egg whites, well beaten
  • sugar (for egg whites)

Method

  1. 1 Wet cornstarch with cold water. In a dish, stir together cornstarch, sugar, and butter.
  2. 2 Pour on boiling water to make a thick custard. Stir in well-beaten egg yolks and bring to a boil.
  3. 3 Slice ripe bananas thin and pour the hot custard over them.
  4. 4 Top with whipped cream, or alternatively, top with egg whites beaten well with sugar.
  5. 5 Chill and serve cold.
