Banana Custard Ice Cream

Ingredients

  • 1 ½ cups banana pulp
  • 1 cup sugar
  • Juice of 1 lemon
  • 2 ½ cups milk
  • 4 tablespoons cornstarch
  • 2 egg yolks
  • 2 egg whites

Method

  1. 1 In a mixing bowl, combine banana pulp, sugar, and lemon juice. Cover and set aside.
  2. 2 In a saucepan, whisk milk and cornstarch until dissolved. Bring to a boil and cook for 5 minutes.
  3. 3 Stir in egg yolks. Remove from heat and beat in the banana mixture until thoroughly blended.
  4. 4 Fold in stiffly beaten egg whites. Freeze in an ice cream maker according to manufacturer instructions.
