Banana Custard Ice Cream
Ingredients
- 1 ½ cups banana pulp
- 1 cup sugar
- Juice of 1 lemon
- 2 ½ cups milk
- 4 tablespoons cornstarch
- 2 egg yolks
- 2 egg whites
Method
- 1 In a mixing bowl, combine banana pulp, sugar, and lemon juice. Cover and set aside.
- 2 In a saucepan, whisk milk and cornstarch until dissolved. Bring to a boil and cook for 5 minutes.
- 3 Stir in egg yolks. Remove from heat and beat in the banana mixture until thoroughly blended.
- 4 Fold in stiffly beaten egg whites. Freeze in an ice cream maker according to manufacturer instructions.
