Banana Cupcakes
Ingredients
- 1/2 cup shortening
- 3/4 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1 1/2 cups flour
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup mashed banana
Method
- 1 Preheat oven to 350°F.
- 2 Cream shortening and sugar in a large bowl. Add eggs and vanilla, mixing well.
- 3 In a medium bowl, combine flour, baking powder, baking soda, and salt.
- 4 Add dry ingredients and mashed banana to the creamed mixture. Mix until combined.
- 5 Fill lined muffin cups 2/3 full with batter.
- 6 Bake 20-22 minutes until golden brown. Cool on a rack.
