Banana Cupcakes

Ingredients

  • 1/2 cup shortening
  • 3/4 cup sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/2 cups flour
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup mashed banana

Method

  1. 1 Preheat oven to 350°F.
  2. 2 Cream shortening and sugar in a large bowl. Add eggs and vanilla, mixing well.
  3. 3 In a medium bowl, combine flour, baking powder, baking soda, and salt.
  4. 4 Add dry ingredients and mashed banana to the creamed mixture. Mix until combined.
  5. 5 Fill lined muffin cups 2/3 full with batter.
  6. 6 Bake 20-22 minutes until golden brown. Cool on a rack.
