Banana Cornmeal Bread With Walnuts And Raisins
Ingredients
- 1/2 cup cornmeal
- 1/2 cup all-purpose flour
- 1 teaspoon baking powder
- 1/4 teaspoon salt
- 2 ripe bananas, mashed
- 1/2 cup water
- 1 tablespoon egg mix (or 1 egg)
- 1/4 cup raisins
- 1/4 cup walnuts, chopped
- Nonstick cooking spray
Method
- 1 Preheat oven to 350°F. In a medium bowl, combine cornmeal, flour, baking powder, and salt. Set aside.
- 2 In a small bowl, combine mashed bananas, water, and egg mix. Stir until well mixed.
- 3 Stir the banana mixture into the cornmeal mixture until moistened. Gently stir in raisins and walnuts.
- 4 Lightly spray a medium skillet or baking pan with nonstick spray. Spoon batter into the pan.
- 5 Bake for 18-20 minutes until golden brown and a toothpick inserted in the center comes out clean.
- 6 Cut into four equal slices and serve hot or cold.
