Banana Cornmeal Bread With Walnuts And Raisins

  • 1/2 cup cornmeal
  • 1/2 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 2 ripe bananas, mashed
  • 1/2 cup water
  • 1 tablespoon egg mix (or 1 egg)
  • 1/4 cup raisins
  • 1/4 cup walnuts, chopped
  • Nonstick cooking spray

Method

  1. 1 Preheat oven to 350°F. In a medium bowl, combine cornmeal, flour, baking powder, and salt. Set aside.
  2. 2 In a small bowl, combine mashed bananas, water, and egg mix. Stir until well mixed.
  3. 3 Stir the banana mixture into the cornmeal mixture until moistened. Gently stir in raisins and walnuts.
  4. 4 Lightly spray a medium skillet or baking pan with nonstick spray. Spoon batter into the pan.
  5. 5 Bake for 18-20 minutes until golden brown and a toothpick inserted in the center comes out clean.
