Banana Cake With Meringue Topping

Ingredients

  • 1/2 cup sugar
  • 4 tablespoons shortening
  • 1 egg
  • 1 1/4 cups sifted flour
  • 3 teaspoons baking powder
  • 1 teaspoon vanilla extract
  • 1/2 cup water
  • 3 bananas, sliced thin
  • 1 egg white
  • 1/2 cup apple jelly

Method

  1. 1 Cream together sugar, shortening, and egg in a mixing bowl.
  2. 2 Add flour, baking powder, vanilla, and water; beat to mix.
  3. 3 Pour batter into greased and floured oblong baking pans.
  4. 4 Spread sliced bananas over the top of the cake.
  5. 5 Bake in a moderate oven (350°F) for 35 minutes.
  6. 6 Whip egg white and apple jelly to create a meringue topping.
