Banana Cake With Meringue Topping
Ingredients
- 1/2 cup sugar
- 4 tablespoons shortening
- 1 egg
- 1 1/4 cups sifted flour
- 3 teaspoons baking powder
- 1 teaspoon vanilla extract
- 1/2 cup water
- 3 bananas, sliced thin
- 1 egg white
- 1/2 cup apple jelly
Method
- 1 Cream together sugar, shortening, and egg in a mixing bowl.
- 2 Add flour, baking powder, vanilla, and water; beat to mix.
- 3 Pour batter into greased and floured oblong baking pans.
- 4 Spread sliced bananas over the top of the cake.
- 5 Bake in a moderate oven (350°F) for 35 minutes.
- 6 Whip egg white and apple jelly to create a meringue topping.
