Banana Berry Whole Wheat Muffins
Ingredients
- Nonstick cooking spray
- 1/4 cup applesauce
- 2 tablespoons sugar
- 2 dried egg mix (or 1 egg)
- 2 ripe bananas, mashed
- 1/4 cup water
- 1/4 cup all-purpose flour
- 1/4 cup whole wheat flour
- 1/2 teaspoon quick cooking oats
- 1/2 teaspoon baking powder
- 1/4 teaspoon baking soda
- 1/4 teaspoon salt
- Blueberries or strawberries (fresh or frozen)
Method
- 1 Preheat oven to 350°F. Spray a 12-cup muffin pan with nonstick cooking spray.
- 2 In a medium bowl, combine applesauce, sugar, dried egg mix, mashed bananas, and water. Mix well.
- 3 In a large bowl, whisk together all-purpose flour, whole wheat flour, oats, baking powder, baking soda, and salt.
- 4 Add the wet ingredients to the dry ingredients and mix just until moist. Gently fold in the berries.
- 5 Fill each muffin cup about 3/4 full. Bake for 25-30 minutes until lightly browned.
- 6 Cool for 10 minutes in the pan, then remove to a wire rack.
