Banana Berry Whole Wheat Muffins

Ingredients

  • Nonstick cooking spray
  • 1/4 cup applesauce
  • 2 tablespoons sugar
  • 2 dried egg mix (or 1 egg)
  • 2 ripe bananas, mashed
  • 1/4 cup water
  • 1/4 cup all-purpose flour
  • 1/4 cup whole wheat flour
  • 1/2 teaspoon quick cooking oats
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 teaspoon salt
  • Blueberries or strawberries (fresh or frozen)

Method

  1. 1 Preheat oven to 350°F. Spray a 12-cup muffin pan with nonstick cooking spray.
  2. 2 In a medium bowl, combine applesauce, sugar, dried egg mix, mashed bananas, and water. Mix well.
  3. 3 In a large bowl, whisk together all-purpose flour, whole wheat flour, oats, baking powder, baking soda, and salt.
  4. 4 Add the wet ingredients to the dry ingredients and mix just until moist. Gently fold in the berries.
  5. 5 Fill each muffin cup about 3/4 full. Bake for 25-30 minutes until lightly browned.
