Baked Zucchini Carrot Casserole

Ingredients

  • 2 eggs, lightly beaten
  • 1/4 cup vegetable oil
  • 3 cups thinly sliced zucchini or yellow squash
  • 1/4 cup chopped onion
  • 1 cup biscuit mix
  • 1 teaspoon dried parsley
  • 1/3 cup grated cheddar cheese
  • 1 cup grated carrots

Method

  1. 1 Preheat oven to 350°F. Grease a 13x9-inch baking dish.
  2. 2 Mix beaten eggs, oil, zucchini, onion, biscuit mix, parsley, cheese, and carrots thoroughly.
  3. 3 Pour mixture into prepared dish and bake for 25 minutes until bubbly and brown.
  4. 4 Cut into 8 squares and serve warm.
