Baked Zucchini Carrot Casserole
Ingredients
- 2 eggs, lightly beaten
- 1/4 cup vegetable oil
- 3 cups thinly sliced zucchini or yellow squash
- 1/4 cup chopped onion
- 1 cup biscuit mix
- 1 teaspoon dried parsley
- 1/3 cup grated cheddar cheese
- 1 cup grated carrots
Method
- 1 Preheat oven to 350°F. Grease a 13x9-inch baking dish.
- 2 Mix beaten eggs, oil, zucchini, onion, biscuit mix, parsley, cheese, and carrots thoroughly.
- 3 Pour mixture into prepared dish and bake for 25 minutes until bubbly and brown.
- 4 Cut into 8 squares and serve warm.
