Baked Whiting With Anchovy And Rosemary
Ingredients
- 1 whole whiting (about 1 lb), trimmed
- Salt and pepper to taste
- 3 tablespoons olive oil, divided
- 3-4 anchovy fillets, boned and chopped
- Breadcrumbs
- Rosemary leaves
- 1 lemon, halved
Method
- 1 Trim the whiting, leaving the head and tail. Split it to remove the bone and season inside and out with salt and pepper.
- 2 Place the fish on its back in a greased baking tin. Drizzle with 2 tablespoons of oil and dust generously with breadcrumbs.
- 3 In a small pan, heat the remaining oil and gently warm the chopped anchovies without boiling. Pour this sauce over the fish.
- 4 Top with rosemary leaves and more breadcrumbs. Bake in a moderate oven (350°F) until a light crust forms, basting with oil if needed.
- 5 Remove from oven and squeeze half a lemon over the fish before serving.
