Baked White Fish With Cracker Custard
Ingredients
- White fish fillets
- Salt and pepper for dredging
- 2 eggs
- 1 ½ cups milk
- 1/8 tsp salt
- 1/8 tsp pepper
- 1/8 tsp nutmeg
- 3 soda crackers, crushed
- 2 tbsp butter
- ½ can tomato (alternative)
- 1 tsp salt
- ½ tsp thyme
- ¼ tsp pepper
- 1 slice onion
- 1 bay leaf
- 3 cloves
Method
- 1 Dredge fish fillets in salt and pepper. Layer them in a baking pan.
- 2 Beat eggs with 1 ½ cups milk, 1/8 tsp salt, 1/8 tsp pepper, 1/8 tsp nutmeg, and crushed soda crackers.
- 3 Melt 2 tbsp butter in the pan with the fish. Pour in half the milk mixture and baste fish frequently.
- 4 Continue adding milk mixture and basting until custard sets and fish is cooked. Serve with custard flakes on top.
- 5 Alternative: Simmer tomato with 1 tsp salt, ½ tsp thyme, ¼ tsp pepper, onion, bay leaf, and cloves. Use this sauce instead of custard.
