Baked White Fish With Cracker Custard

Ingredients

  • White fish fillets
  • Salt and pepper for dredging
  • 2 eggs
  • 1 ½ cups milk
  • 1/8 tsp salt
  • 1/8 tsp pepper
  • 1/8 tsp nutmeg
  • 3 soda crackers, crushed
  • 2 tbsp butter
  • ½ can tomato (alternative)
  • 1 tsp salt
  • ½ tsp thyme
  • ¼ tsp pepper
  • 1 slice onion
  • 1 bay leaf
  • 3 cloves

Method

  1. 1 Dredge fish fillets in salt and pepper. Layer them in a baking pan.
  2. 2 Beat eggs with 1 ½ cups milk, 1/8 tsp salt, 1/8 tsp pepper, 1/8 tsp nutmeg, and crushed soda crackers.
  3. 3 Melt 2 tbsp butter in the pan with the fish. Pour in half the milk mixture and baste fish frequently.
  4. 4 Continue adding milk mixture and basting until custard sets and fish is cooked. Serve with custard flakes on top.
  5. 5 Alternative: Simmer tomato with 1 tsp salt, ½ tsp thyme, ¼ tsp pepper, onion, bay leaf, and cloves. Use this sauce instead of custard.
