Baked White Fish And Mashed Potatoes
Ingredients
- 2 pounds halibut or white fish
- 1 slice onion
- 1 stalk celery
- 1 sprig parsley
- 6 peppercorns
- 4 cloves
- 1 bay leaf
- Juice of ½ lemon
- 1 tablespoon butter
- 1 tablespoon flour
- 1 cup milk
- Salt and pepper to taste
- Cayenne pepper to taste
- 4 medium potatoes
- ½ teaspoon salt
- ¼ teaspoon pepper
- Cream or milk for potatoes
- 4 egg whites, beaten stiff
Method
- 1 Boil fish with onion, celery, parsley, peppercorns, cloves, bay leaf, and lemon juice until tender. Remove bones and flake the fish.
- 2 Make white sauce: melt butter, stir in flour, add milk, salt, pepper, and cayenne. Cook until thickened.
- 3 Boil potatoes until tender. Mash with salt, pepper, and cream/milk. Beat until light, then fold in stiff-beaten egg whites.
- 4 Layer flaked fish in a baking dish. Pour white sauce over fish. Top with potato mixture, keeping surface rough.
- 5 Bake at 350°F for 15 minutes or until browned.
