Baked White Fish And Mashed Potatoes

Ingredients

  • 2 pounds halibut or white fish
  • 1 slice onion
  • 1 stalk celery
  • 1 sprig parsley
  • 6 peppercorns
  • 4 cloves
  • 1 bay leaf
  • Juice of ½ lemon
  • 1 tablespoon butter
  • 1 tablespoon flour
  • 1 cup milk
  • Salt and pepper to taste
  • Cayenne pepper to taste
  • 4 medium potatoes
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • Cream or milk for potatoes
  • 4 egg whites, beaten stiff

Method

  1. 1 Boil fish with onion, celery, parsley, peppercorns, cloves, bay leaf, and lemon juice until tender. Remove bones and flake the fish.
  2. 2 Make white sauce: melt butter, stir in flour, add milk, salt, pepper, and cayenne. Cook until thickened.
  3. 3 Boil potatoes until tender. Mash with salt, pepper, and cream/milk. Beat until light, then fold in stiff-beaten egg whites.
  4. 4 Layer flaked fish in a baking dish. Pour white sauce over fish. Top with potato mixture, keeping surface rough.
  5. 5 Bake at 350°F for 15 minutes or until browned.
