Baked White Cornmeal Cakes
Ingredients
- 1 quart white cornmeal
- 1 tsp salt
- Cold water
- Bran from the cornmeal
Method
- 1 Sift 1 quart of white cornmeal and add 1 tsp of salt.
- 2 Pour on enough cold water to make a mixture that squeezes easily through your fingers. Work it into a soft dough.
- 3 Mold the dough into oblong cakes, 1 inch thick at the ends and slightly thicker in the center. Press them with your fingers to leave marks.
- 4 Place cakes on a hot pan sprinkled with bran sifted from the meal. Bake in a hot oven (425°F) for about 20 minutes.
