Baked White Cornmeal Cakes

  • 1 tsp salt
  • Cold water
  • Bran from the cornmeal

Method

  1. 1 Sift 1 quart of white cornmeal and add 1 tsp of salt.
  2. 2 Pour on enough cold water to make a mixture that squeezes easily through your fingers. Work it into a soft dough.
  3. 3 Mold the dough into oblong cakes, 1 inch thick at the ends and slightly thicker in the center. Press them with your fingers to leave marks.
  4. 4 Place cakes on a hot pan sprinkled with bran sifted from the meal. Bake in a hot oven (425°F) for about 20 minutes.
