Baked Wheatmeal Pudding With Marmalade
Ingredients
- 1 pint milk
- 2 oz Allinson fine wheatmeal
- sugar to taste
- a few drops almond extract
- 3 eggs, well beaten
- marmalade or other preserve
Method
- 1 Boil the milk and wheatmeal together as you would for a blancmange.
- 2 Flavor the mixture with sugar and almond extract, then let it cool.
- 3 Stir the beaten eggs into the cooled mixture.
- 4 Spread a layer of marmalade or preserve in the bottom of a pie dish.
- 5 Pour the mixture over the preserve and bake for 20 to 30 minutes.
