Baked Wheatmeal Pudding With Marmalade

Ingredients

  • 1 pint milk
  • 2 oz Allinson fine wheatmeal
  • sugar to taste
  • a few drops almond extract
  • 3 eggs, well beaten
  • marmalade or other preserve

Method

  1. 1 Boil the milk and wheatmeal together as you would for a blancmange.
  2. 2 Flavor the mixture with sugar and almond extract, then let it cool.
  3. 3 Stir the beaten eggs into the cooled mixture.
  4. 4 Spread a layer of marmalade or preserve in the bottom of a pie dish.
  5. 5 Pour the mixture over the preserve and bake for 20 to 30 minutes.
