Baked Welsh Cheese Pudding With Lemon Sauce

  • 5 oz grated cheese
  • 1 cup bread crumbs
  • 1 cup flour
  • 1 ½ tsp salt
  • 1 tsp white pepper
  • 1 tsp paprika
  • 1 tbsp Worcestershire sauce
  • 1 tbsp baking powder
  • 4 tbsp grated onions
  • 1 egg
  • 1 cup milk
  • 1 cup milk (for sauce)
  • 2 tbsp cornstarch
  • 1 egg, well-beaten (for sauce)
  • 1 tsp salt (for sauce)
  • 2 tsp paprika (for sauce)
  • Juice of ½ lemon

Method

  1. 1 Preheat oven to 350°F (or prepare a boiling water bath).
  2. 2 Mix cheese, bread crumbs, flour, salt, pepper, paprika, Worcestershire sauce, baking powder, onions, egg, and 1 cup milk until thoroughly combined.
  3. 3 Pour mixture into greased molds or a prepared pudding cloth.
  4. 4 Boil for 1 hour 45 minutes, or bake at 350°F for similar time until set.
  5. 5 For sauce: Dissolve cornstarch in 1 cup milk in a saucepan; bring to a boil and cook 5 minutes.
  6. 6 Remove sauce from heat; whisk in beaten egg, salt, paprika, and lemon juice. Serve hot over pudding.
