Baked Welsh Cheese Pudding With Lemon Sauce
Ingredients
- 5 oz grated cheese
- 1 cup bread crumbs
- 1 cup flour
- 1 ½ tsp salt
- 1 tsp white pepper
- 1 tsp paprika
- 1 tbsp Worcestershire sauce
- 1 tbsp baking powder
- 4 tbsp grated onions
- 1 egg
- 1 cup milk
- 1 cup milk (for sauce)
- 2 tbsp cornstarch
- 1 egg, well-beaten (for sauce)
- 1 tsp salt (for sauce)
- 2 tsp paprika (for sauce)
- Juice of ½ lemon
Method
- 1 Preheat oven to 350°F (or prepare a boiling water bath).
- 2 Mix cheese, bread crumbs, flour, salt, pepper, paprika, Worcestershire sauce, baking powder, onions, egg, and 1 cup milk until thoroughly combined.
- 3 Pour mixture into greased molds or a prepared pudding cloth.
- 4 Boil for 1 hour 45 minutes, or bake at 350°F for similar time until set.
- 5 For sauce: Dissolve cornstarch in 1 cup milk in a saucepan; bring to a boil and cook 5 minutes.
- 6 Remove sauce from heat; whisk in beaten egg, salt, paprika, and lemon juice. Serve hot over pudding.
