Baked Veal And Ham Rolls
Ingredients
- veal fillet, bone removed
- 1 egg yolk, beaten
- thin slices of boiled ham
- salt
- pepper
- grated nutmeg
- chopped parsley
- bread crumbs
- 1 egg, for washing
- rich highly seasoned gravy
- forcemeat balls
- green pickles, sliced
Method
- 1 Cut thin slices from the boneless veal fillet and beat them flat.
- 2 Rub each slice with beaten egg yolk, then top with a thin slice of boiled ham.
- 3 Sprinkle with salt, pepper, nutmeg, parsley, and bread crumbs, then roll tightly and secure with skewers.
- 4 Rub rolls with egg, coat in bread crumbs, and place on a pan.
- 5 Bake in a moderate oven (350°F), turning once, until browned and cooked through.
- 6 Place in a thick, seasoned gravy and stew until tender. Garnish with forcemeat balls and sliced pickles.
