Baked Veal And Ham Rolls

Ingredients

  • veal fillet, bone removed
  • 1 egg yolk, beaten
  • thin slices of boiled ham
  • salt
  • pepper
  • grated nutmeg
  • chopped parsley
  • bread crumbs
  • 1 egg, for washing
  • rich highly seasoned gravy
  • forcemeat balls
  • green pickles, sliced

Method

  1. 1 Cut thin slices from the boneless veal fillet and beat them flat.
  2. 2 Rub each slice with beaten egg yolk, then top with a thin slice of boiled ham.
  3. 3 Sprinkle with salt, pepper, nutmeg, parsley, and bread crumbs, then roll tightly and secure with skewers.
  4. 4 Rub rolls with egg, coat in bread crumbs, and place on a pan.
  5. 5 Bake in a moderate oven (350°F), turning once, until browned and cooked through.
